Instructions

  1. Mix the kofta — Combine lamb, grated onion, garlic, parsley, mint, and all spices in a bowl. Mix with your hands until just combined — do not overwork or the meat will become tough and dense.
  2. Shape onto skewers — Divide into 8 portions. Press each portion around a skewer in a long, oval sausage shape about ¾ inch thick. If the mixture is sticky, wet your hands. Refrigerate 15 minutes to firm up.
  3. Make the tzatziki — Combine Greek yogurt, grated cucumber (squeezed very dry), 1 grated garlic clove, lemon juice, a pinch of salt, and a drizzle of olive oil. Chill until serving.
  4. Grill the kofta — Preheat grill to high heat. Oil the grates. Grill kofta 3-4 minutes per side until charred outside and just cooked through. Don't move them too early — let a crust form before flipping.

FAQ

My kofta keeps falling off the skewers — why?
